Saturday Eats

Happy Monday! I thought it would be fun to do something out of the norm and share with you guys a full day of eats. Before I start, though, let me borrow a few wise words from the wonderful Paige Schmidt:

I couldn’t have said it better myself! So this particular day of eats is from this past Saturday. Josh was at a continuing education class in Charlotte, so I was flying solo most of the day. I spent the morning running errands and cleaning around the house, then in the afternoon hung out with one of my best friends at her house in Durham. Best friend time is so good for my soul!

Lately I have been loving buying cold brew coffee, and this weekend I tried a brand called Stok, which I found on sale at Food Lion. Added cream and ice cubes and it was perfect!

For breakfast I mixed up some pancake batter (used a boxed mix from Trader Joe’s) and threw in frozen blueberries as I was cooking them. Topped with almond butter and enjoyed with a glass of almond milk. Does anyone else LOVE putting nut butter on their pancakes?! It gets all melty and delicious.



For lunch I had one of my favorites- breakfast tacos. This was 3 eggs cooked with some frozen spinach and then rolled up into tortillas with avocado. Ended the meal with a piece of chocolate for good measure. šŸ˜‰



As I was leaving my friend’s house later in the afternoon I was getting hungry and didn’t feel like waiting until I got home to eat, so I had this KIND bar that was in my purse. Bars foreverrr!


Since it was just me for dinner that night, I was really unmotivated to cook and wasn’t feeling any of the leftovers in the fridge, so I treated myself to my faaavorite salad from Happy + Hale. I think I’ve already mentioned this salad about nine times on the blog but it is just the best. It has quinoa, kale, black beans, roasted butternut squash, avocado, beets, pepitas, and a lemon tahini dressing. I always ask for extra roasted butternut squash and they haven’t said no yet!


I actually ended up bringing the salad home to eat on the couch in my pajamas while watching This Is Us… because I’m an adult and I can do what I want.


I almost always have a snack before bed. That night I was feeling more snacky than usual and had a bowl of Puffins with milk, plus peanut butter straight from the jar. Bedtime snacks are my jam because I like going to sleep feeling full + satisfied but not overly stuffed.

  1. Love daily eats posts and completely agree with Paige! Your eats look AMAZING! I will eat anything you cook šŸ™‚ Probably the best thing I ate this weekend was a cinnamon bun from our favorite bakery šŸ™‚
