At one point during our weekend in Asheville, our sweet AirBnB host came down with a plate of warm slices of homemade banana bread. It was absolutely delicious and you know I asked her for the recipe! I made it over the weekend and it was so easy I just had to share.
4 tablespoons butter, melted
1/2 cup honey or sugar
2 eggs, beaten
1 cup banana, mashed
1 3/4 cups pancake or baking mix
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup walnuts
Preheat oven to 350 F.
Beat together butter, honey/sugar, eggs, and banana.
Add remaining ingredients and mix well.
Pour into a greased 8×4 or 9×5 loaf pan.
Bake for 1 hour, or until inserted toothpick comes out clean.
