Chicken dinner

Are you ready for a super easy dinner recipe that’s not even a recipe? This is one of those meals that will take you less than an hour to whip up but is also really filling and comforting. Plus, it features one of my favorite ingredients: OLIVES.

Ok, here’s the deal:

Step one is to buy a rotisserie chicken. Easy. Done!

Next slice up some potatoes and fresh broccoli (or use frozen, no judgement here). Douse in lots of oil and salt and roast in a preheated oven at 415 degrees for 25ish minutes. I also threw some garlic cloves on the pan to roast, which made me feel like Ina Garten.

While the veggies are roasting you are basically just twiddling your thumbs and mindlessly scrolling the internet on your phone because this dinner is so easy there isn’t much else to do! Take a break from scrolling and pop open a jar (or a can, you do you) of olives. Pour into a serving bowl, drizzle with olive oil, and top with some oregano. Slice up a lemon for a plate garnish if you really want to live large.

THAT’S IT. Within about 30 minutes you have a table full of roasted chicken, delicious olives swimming in herbs, crispy broccoli, and salty golden potatoes. Ketchup is optional but recommended.
