Jok moo

Last night I made another cookbook recipe, this time from Chrissy Teigen’s Cravings. Her recipe for jok moo is essentially a rice porridge with chunks of gingery, garlicky, soy saucey pork. Halfway through making this recipe I started having doubts because it looked a bit unappetizing, but the end result was pure gold!

It had SO much flavor and, according to Josh, tasted like a heartier chicken noodle soup. Topped it with some cilantro and served it with a (random) side of maple mustard roasted cabbage. We are eating the leftovers for dinner tonight and I’m prettyy excited.

Now I’m off to enjoy this GORGEOUS North Carolina weather- it’s sunny and in the 70s today!
