Blueberry buckwheat pancakes

On Saturday we got a new fridge, which of course necessitated that I clean out our old one. Among the many long-forgotten items that had been shoved to the back? Buckwheat flour! I can’t remember what initially prompted me to buy this stuff, all I know is now I am determined to use it. Enter: blueberry buckwheat pancakes. Technically they are banana blueberry buckwheat pancakes, but that seemed like too long of a name, not to mention too much alliteration.

These are super simple and delicious! Perfect for a lazy weekend morning paired with coffee and an excess of time. Pancakes just make me feel happy and indulgent, ya know?

Blueberry Buckwheat Pancakes

1 ripe banana

1 egg

1 tablespoon coconut oil

1/4 teaspoon cinnamon

1/4 teaspoon baking soda

1/3 cup buckwheat flour

1/2 cup milk

1/4 cup blueberries

-In a medium bowl, mash banana

-Mix in egg, 1 T melted coconut oil, milk

-Mix in cinnamon, baking soda, flour

-Pour pancake batter (I made 3 pancakes) into a hot, well-oiled skillet, topping with blueberries and cooking for several minutes on each side

-Top with butter and maple syrup; serve with your favorite coffee!
