Last week we got to spend a few days in the Outer Banks with Josh’s side of the family. The weather was absolute perfection and we spent our time playing on the beach, climbing sand dunes in search of wild horses, and enjoying homemade meals. One afternoon while the boys were napping, I biked down to this quaint little smoothie shop called the Juice Jar. I ordered the pura vida smoothie, settled myself into an Adirondack chair in the shade, and sipped away. Did I mention that I was by myself? Pure bliss!!!
Of course, the first thing I did when we got home was try to recreate that heavenly smoothie. It tasted like an endless summer day with just a hint of earthiness thrown in. Here is the copycat recipe I came up with:
Pura Vida Smoothie
-1 frozen banana
-1 cup frozen mango
-1 date
-2 tablespoons almond butter
-2 cups coconut milk (more or less depending on your preferred consistency)
Blend that baby up and pour it into your favorite glass. Then find a shady spot outside (ideally while your children—whom you adore but still definitely need a break from—are napping) and ENJOY!
